jenni's best ever lemon cake
1 Box of Lemon Cake Mix
1 Box Instant Lemon Pudding
4 eggs
1/2c oil
1/2c water
1 cup sour cream
1-Mix all ingredients in mixer and pour into 2 greased round cake pans.
2-Bake 350 degrees for 25-35 min-when toothpick comes out clean..
3-While cake is baking and then cooling completely, make icing:
LEMON CREAM CHEESE ICING
½-1 block cream cheese (left out for a bit to soften)
1/3 cup (soft) butter
2 lb bag powdered sugar
2 lemons
2-3 T Milk (If needed)
1-Cream butter and cream cheese.
*Use full block of cream cheese if you love cream cheese icing. Use a little less if like me, you are more of a buttercream icing person.
2-Squeeze lemon juice through a strainer.
3-Slowly add powdered sugar until thick frosting consistency and to taste. I use about 3/4 of a 2 lb bag.
4-Add a Tbsp at a time of milk, half & half, or heavy whipping cream, if icing is too thick.
